Hirosaki City, Aomori Prefecture is located in the castle town of Hirosaki Castle, known for its magnificent cherry blossoms in spring.
The Shoroku Sake Brewery has made its living making sake mother in this area since the Edo period (1603-1868), and sold it to sake brewers throughout Tsugaru.
Later, brewing experiment stations were established in various regions, and under their guidance, brewers began to make their own sake mothers, so in 1904 the company switched its business to sake production and was incorporated in 1959.
In recent years, in 2016, the company became the first in Aomori Prefecture to obtain kosher certification, which is widely recognized overseas as a food safety regulation, and converted to a pure rice brewery without adding any brewing alcohol, thus transforming the company with an eye on the times while respecting tradition.
